New Years greetings and a tasty farm-to-table meal

New Years greetings and a tasty farm-to-table meal

Holy moly, January sure went by fast, didn't it...

Well, (very belated) Happy New Year from TPS Farms to everyone. We celebrated in somewhat traditional style with ham, greens, peas, and cornbread. Now we're busy getting everything ready for this year's planting season, which starts next week with alliums and potatoes going out into beds.

However, going back to New Year's dinner ('cause, wow, was it tasty)...

CTO John slow-roasted a ham for us and I whipped up some cornbread. The peas were purple hull peas that I had picked fresh last year, simmered low and slow in a smoked pork broth with TPS Farms peppers and herbs. The greens were a mix of mustards and collards fresh from our winter garden, quickly wilted in smoked pork fat.

White plate on a wooden table. Three quadrants contain food directly on the plate, while one quadrant in the upper right corner contains a white bowl with cooked purple hull peas in smoked pork broth, a few small stray pork chunks scatter across the top of the peas. Moving clock-wise around the plate from the bowl are fresh greens, wilted and shiny with pork fat; a rectangular piece of cornbread split top from bottom and well-buttered; and finally, several chunks of roasted ham.

Farm products used:

  • Purple hull peas
  • Fresh mixed peppers
  • Mustard greens
  • Collards
  • Bay leaves
  • Rosemary

Guess it's time for me to finish up here and get to figuring out this last seed order before things get REALLY busy around here...

See ya'll later!
